Watermelon, Feta, Blueberry, and Mint Salad
SUMMER! you are still with us and I am not letting go just yet. My kids are back in school, premature groceries have mums already, but I am not relenting. I have to ring out every last day, therefore, the summer produce bucket list is happening on Be Sweet. We know we'll miss them when they're gone so let's relish them in the moment. I am leaving it to my favorite summer salad to lift my spirits aloft; it enlists the formidable combination of watermelon, berries, feta and fresh herbs! This is the happiest, quickest and most satisfying summer salad, I know, bask in it!
Cube your watermelon, crumble your feta, toss in some blueberries, slice your mint, and you're there! Oh, and I like to sprinkle a little salt on top to bring out the sweetness of the watermelon. Not only is this salad wonderful for a last minute gathering at your own home, it's a beautiful and portable offering for a party of one or many and especially for those last summer cookouts.
It goes without saying that I love France, I wear that, clearly on my sleeve (or, in this case, my pocket), but I must admit that living in the Midwest certainly has its charms. And those charms include not only the rolling farmland replete with amazing produce, but most importantly the loveliest friends and customers and staff this baker could ever hope for. Watermelon, Feta, Blueberry, and Mint Salad
Ingredients
half a seedless watermelon
2 - 8 oz. feta, preferably in a block
2 C. blueberries
1/2 C. fresh mint, chopped chiffonade-style
pinch of salt (optional)
Directions
Slice and cube half of a seedless watermelon and place in bowl or on serving platter.
Crumble feta and gently toss with watermelon.
Sprinkle evenly with blueberries and mint. Give mixture a gentle fold/toss and sprinkle with salt.
